The bell pepper is for a touch of extra flavour, and you can totally enjoy this by adding other veggies of your choice!

2 cups cooked and cooled rice (leftover is the best!)

3 tbsp oil

6 cloves garlic, minced

1 tsp turmeric powder

1/2 tsp salt, plus more to taste

1 small red bell pepper, diced (or whatever veggies you have, really)

Dash of pepper.

Spring onions, for garnish (optional)

Suggestion: You can use up whatever veggies you have for this recipe—whether fresh or frozen. Diced tofu would be a good addition too if you’re looking for some more protein!

  1. Heat a pan. Add in 3 tbsp oil. When hot, add in the minced garlic and salt. Sauté until garlic is lightly browned. Add in the turmeric powder. Mix then add in the bell pepper. Feel free to add other veggies of choice or even tofu!
  2. Cook until veggies are tender then add in the rice. Mix well and season with more salt to taste and pepper, if desired. Top with some chopped spring onions (optional).

I made the garlic turmeric rice and it was so delicious that I made it again the following night! Simple and wonderful recipe.

I only used 2 tablespoons of oil and I was happy to find it was plenty enough. I also wilted 3-4 cups of sliced spinach in the rice during the last few minutes of its cook time. The cilantro and spring onions we’re really a perfect complement to garnish for it.

Thank you for the recipe, I look forward to trying the teriyaki.

Please, how do you keep the cilantro from going bad in the fridge as it’s not used in every recipe?

Hi Bryan! I place mine in a glass jar with water (enough for the roots to reach) then I wrap the top with a plastic bag and seal with a rubber band. So it creates this vacuum with air inside. It works for me and keeps the cilantro fresh for longer!
